Planning Ahead for Healthier Meals

  Although it’s still winter, the daylight is lasting a bit longer
//every day. On Groundhog Day in southern Ontario,  
..Wiarton Willie told us we would have an early spring.
 ..Only time will tell if his prediction comes true!

Did you make a New Year’s resolution to eat less and exercise more? Have you given up on that resolution already? Would it be better if you resolve to eat healthier instead? It’s easier to do if your kitchen is stocked with healthy food choices. Planning your meals in advance can help.

So let’s get started and turn over another leaf!

MEAL PLANNING

An important aspect of running a household is planning meals.

Two friends of mine cook for one or two days every month and freeze meals to enjoy during the month. It’s a big undertaking to make a whole month’s worth of meals. Perhaps you’re not ready for a massive cooking session. Start small; double a recipe and freeze one batch to use later. Having a healthy meal ready can make a busy night less hectic.

Meal planning may initially seem like a lot of work, but it will become easier once you’ve done it a few times.

  • Make a list of meals for the next week.
  • What ingredients are required in order to make these meals?
  • Check your cupboards/pantry, refrigerator and freezer to see what ingredients you already have on hand.
  • Create a grocery list.
  • Check grocery store flyers for the week’s sale items.

Plan a variety of meals, so you don’t get bored. An added benefit is that you’ll be able to reuse your meal plan again in the future.

Scheduling

Once you’ve stocked up on groceries, get ready to cook.

If you undertake cooking a large quantity of food at one time, you will need to:

  • estimate how much time you need for cooking.
  • schedule cooking time as well as clean-up time.
  • decide how you will freeze the food–in single, double or larger serving sizes?

Rewards

Some of the rewards of meal planning are:

  • healthier meals
  • making fewer trips to the grocery store–saving you time and money.
  • wasting less food because you’ll use the ingredients that week.
  • less time worrying about what you’re having for dinner and not trying to figure it out at the last minute.


Don’t forget to take advantage of the cold weather and clean out your freezer!

Healthy Soup For A LONG Winter!

A friend shared this recipe from Cleaning for a Reason‘s Facebook post.

SWEET POTATO CAULIFLOWER SOUP

Yield: 6 to 8 servings

1 large head cauliflower (at least 7″ in diameter)
olive oil for drizzling
3 medium/large peeled sweet potatoes, cut into 1″ pieces
1 sweet onion, diced
2 cloves garlic
7 cups filtered water
salt
few dashes garam masala (optional)
diced green onions for garnish (optional)

Preheat oven to 400°F, and cut cauliflower into bite-sized pieces. Sprinkle cauliflower lightly with garam masala. Place cauliflower onto ungreased cookie sheet, and lightly drizzle with olive oil. Place in oven. Roast until golden brown on the tops and tender, but not mushy–about 20-30 minutes. There’s no need to flip them. Just remove from oven, and let cool while you cook the rest of the soup.

In large stockpot, bring sweet potato, onion, garlic and water to a boil. Salt (3/4 tsp) and stir. Reduce heat and allow to remain at a constant simmer until sweet potatoes are tender. Add in cooked cauliflower, and divide soup into 2 parts.

Let soup cool and then blend one part soup in blender until very smooth. Combine with second part soup and stir. Salt to taste, and warm up over stovetop if needed. Garnish with diced green onions before serving.

A Favourite Healthy Summer Recipe!

Summer Time Watermelon Salad

An ABSOLUTELY wonderful Summer Salad!

Ingredients:
1 whole watermelon (cut into bite-sized pieces)
1 lemon (juiced and zested)
1/2c olive oil
sea salt and freshly ground black pepper
handful of basil or mint (chopped)
1c feta cheese (crumbled)

Combine all ingredients in a pretty serving dish and toss gently. Serve. YUMMY!!!

Healthy Summer Recipes…

These recipes have been generously provided by Chef Dierre of Never Enough Thyme Catering.

Pizza Bianca
3/4 C warm water
1 T honey
1 T yeast
2 C all purpose flour
1 1/2 T olive oil
1 t salt

Handful of arugula and spinach
10 cherry tomatoes, sliced in half
8 basil leaves, torn
4 oz goat cheese
2 T white balsamic vinegar
1 T extra virgin olive oil
salt and pepper to taste

Place warm water and honey in a small bowl; stir in the yeast. Allow to activate for approximately 5 minutes.

Pour in mixing bowl; add flour, olive oil and salt. Mix with dough hook for approximately 5 minutes. Place in oiled bowl and cover with cellophane. Allow to double in size. Divide dough in 4. Roll out on floured surface, into an oval shape. Drizzle olive oil on pizza dough and rub oil around. Place on (med heat) grill, and allow to bake through–about 4 minutes. Then flip over the dough to cook through. In a stainless steel bowl, place arugula, spinach, tomato and basil. Add balsamic and olive oil. Toss with salt and pepper. Place on top of grilled pizza dough. Add crumbled goat cheese on top. Serve with slices of grilled steak or chicken if desired. Happy grilling! 

Mackenzie’s Favourite Lemonade
In a water jug combine
5 lemons squeezed – 2 lemons sliced
Agave syrup ¼ C T or sugar 1 C to taste

First, squeeze the lemons into the water jug. Then slice the lemon into wedges. Place in the jug as well. Add ½ C of sugar or the agave syrup. Stir well and place in the sunlight for a few hours. (This is where the anticipation comes!) Pour into a chilled glass filled with ice and enjoy!

Strawberry Rhubarb with Candied Ginger Fool
3 C fresh strawberries
1 C chopped rhubarb
1 T diced candied ginger
1 C sugar
2 t fresh lemon juice
3 C whipping cream
1 t vanilla extract

Sort through berries (checking for inedible ones); wash well. Hull the berries. Place in a large heavy bottomed saucepan. Over low heat, mash the berries with a spoon or potato masher. Add sugar and allow to dissolve. Simmer for 3 minutes. Add lemon juice and finely diced ginger. Allow to cool. Using a hand wand or blender, puree the fruit. Whip cream until soft peaks form. Stir in vanilla. Gently fold the berry mix into the cream; do NOT over mix. Spoon your fool into a serving dish.

When it’s Just Too HOT to Cook…

Summer Down Sizing

Hot.  Hot.  Hot!  This time of year cooking with simplicity is absolutely necessary.  My objective is to not turn on the oven!  As a chef, that is a very difficult task!  At the end of the day, a light refreshing meal makes for a happy family and mom!

Entertaining in the backyard, simple means grilling–as much as possible. Thankfully, we have pots of tomatoes, herbs and greens ready to harvest. Pizza Bianca is a great choice–pizza dough rubbed with olive oil and grilled to bake through.  Snip arugula, basil, spinach, cherry tomatoes off the vine and crumbled goat cheese…yum!  Add a grilled steak or chicken breast, and dinner is almost done.  Strawberries are still available, so a Strawberry Rhubarb Fool is a tasty addition to the outdoor dinner.  No oven required!

My daughter Mackenzie adores her lemonade.  We make this often, and enjoy the refreshing taste.  You can also use limes and oranges for a twist. Enjoy the summer with all its fresh outdoor flavours. Happy cooking!
